After a six month hiatus from writing, I’m delighted to be back in this creative space sharing. The past six months have been marked by tremendous blessings that have kept the family quite busy. I came into a new position, we bought a home, and we traveled across the United States.
I wanted to come back to my blog with something simple. Today, my daughter and I came up with this refreshing recipe, Mango-a-Goji Berry Ice Cream. You’ll need:
2 large Mangos
1/4 cup of Goji Berries
First, we peeled the skin of the mangos with a veggie peeler, cut the mango into cubes, and placed the contents into a large freezer bag. After 3-4 hours of freezing time, we added the frozen mango into a food processor and processed into a creamy consistency. Then, we topped it off with some Goji berries. Alternatively, you could pulse a 1/4 cup into the frozen mixture to create a gorgeous rose color ice cream. And, Voila….
This recipe is incredibly adaptable. Experiment with other toppings, add-ins, and fruits. We’ve done a similar recipe with bananas, cocoa powder, and agave. Namaste and enjoy!
